First, click the Edit button under the item.

Tax Exemption
To exempt an item from tax, just turn on its Exempt from Tax setting, then click the Save button.
Multiple Tax - Item-Specific
If you have a single tax setting, the tax rate will already appear in this section, and you don't have to do anything else.
But if you have item-specific taxes, you can also turn them on in this section. For example, if you have an alcoholic liquor item that will be charged a Sin Tax, then just turn it on in this section. Then click Save.
